Homemade Creamy Vanilla Pudding With Brown Sugar Recipe

When I had a craving for vanilla pudding recently, I looked at quite a few recipes. None were exactly what I was looking for. So I ended up making my own recipe that fit our tastes perfectly! By using brown sugar instead of white sugar, it gives this pudding a butterscotch like flavor. This pudding is very creamy and thick... and absolutely delicious!



Creamy Vanilla Pudding Recipe

1/3 Cup Brown Sugar
2 TBS Cornstarch (or Clear Jel, which we use a lot)
1/4 Tsp Salt
2 1/4 Cups Whole Milk, divided
3 Large Egg Yolks
3 TBS Unsalted Butter

1. Begin by combining the brown sugar, cornstarch, and salt in a medium sized saucepan. Add 1/4 Cup of the milk, whisking it together until smooth. Next add your 3 egg yolks, beat slightly, then add the remaining 2 Cups of milk. Whisk until smooth.

2. Place your pan over medium heat, whisking quite frequently. After five or so minutes, the pudding will just start to bubble and begins to thicken slightly. At this point, turn the heat down to medium low, and using a spatula, stir constantly, until pudding is thickened. This should take just a couple of minutes. 

3. Remove from the heat and add in the vanilla and butter. Try chopping the butter into a few pieces to help it melt faster. Stir together until incorporated. 

4. Transfer to individual ramekins, or to a larger serving bowl. Cover and chill for at least two hours before serving.
